{"id":10719,"date":"2022-03-25T14:15:31","date_gmt":"2022-03-25T13:15:31","guid":{"rendered":"https:\/\/esplanade.hr\/hr\/?p=10719"},"modified":"2022-12-21T14:17:50","modified_gmt":"2022-12-21T13:17:50","slug":"novi-proljetni-a-la-carte-koncept-u-le-bistrou","status":"publish","type":"post","link":"https:\/\/esplanade.hr\/hr\/novi-proljetni-a-la-carte-koncept-u-le-bistrou\/","title":{"rendered":"Novi proljetni a la carte koncept u Le Bistrou"},"content":{"rendered":"<p>[vc_row][vc_column video_bg=&#8221;yes&#8221; video_bg_url=&#8221;&#8221;][vc_column_text]<\/p>\n<div style=\"text-align: center;\">\n<div><span style=\"font-size: x-large;\"><b>Na terasi kultnog Le Bistroa Esplanadina chefica Ana Grgi\u0107 Tomi\u0107 predstavila je novu proljetnu kolekciju autorskih jela\u00a0<\/b><\/span><\/div>\n<div><\/div>\n<div><b>Nadahnuta prolje\u0107em, Ana u novom jelovniku donosi gurmansku eksploziju boja i okusa. \u0160paroge, tartufi, mladi \u0161pinat, alge, sok od krastavaca, velout\u00e9 od koprive, ljubi\u010dasti krumpir, dimljeni romb, jadranske kozice, medvje\u0111i luk, bijeli grah, doma\u0107i sladoled od manga i kokosa \u2013 novi \u00e0 la carte koncept Le Bistroa donosi niz svje\u017eih sezonskih namirnica s dozom pari\u0161kog \u0161ika.\u00a0<\/b><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Dobro poznata\u00a0<i>foodie<\/i>\u00a0destinacija me\u0111u Zagrep\u010danima,\u00a0<b>Esplanadin kultni Le Bistro<\/b>, danas je na svojoj \u017eivopisnoj terasi\u00a0<b>u centru Zagreba<\/b>, uz DJ glazbu i atraktivan\u00a0<b>live cooking<\/b>, brojnim uzvanicima predstavio Anin novi proljetni \u00e0 la carte koncept jela koji donosi niz zavodljivih spojeva nadahnutih svje\u017einom prolje\u0107a.\u00a0<b>Chefica Ana Grgi\u0107 Tomi\u0107<\/b>\u00a0sa svojim timom mladih i kreativnih kuhara u ovoj je prigodi pred gostima pripremala niz privla\u010dnih zalogaja i s osmijehom na licu pokazala kako istinski u\u017eiva u onome \u0161to radi. Predstavljanju proljetnog koncepta nazo\u010dili su brojni mediji, gosti Le Bistroa, kao i neke poznate osobe i gurmani, koji su me\u0111u prvima imali priliku ku\u0161ati jela koja su od danas dostupna gostima Le Bistroa.<\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\"><i>\u201eNadam se da \u0107e gosti ovog prolje\u0107a prona\u0107i pravi gurmanski u\u017eitak u mojim jelima. Istinski sam u\u017eivala kreiraju\u0107i novi jelovnik Le Bistroa. Obo\u017eavam prolje\u0107e i ovu rasko\u0161 boja, tekstura i okusa koja me nadahnula da pripremim spoj iznena\u0111uju\u0107ih te nutritivno izbalansiranih i zdravih jela. Blisko sura\u0111ujem s odli\u010dnim lokalnim dobavlja\u010dima koji mi \u0161alju ono najbolje, tako da je priprema ovih jela bila u\u017eitak. Inspiracije nije nedostajalo\u201d, istaknula je\u00a0<b>chefica\u00a0<\/b><\/i><b>Esplanadine kuhinje Ana Grgi\u0107 Tomi\u0107<\/b><i>\u00a0i dodala: \u201eU pripremi jelovnika i ovog sam se puta vodila odr\u017eivim na\u010delom kuhanja da bi se svi dijelovi maksimalno iskoristili. Primjerice, za riblja jela upotrebljavam file, ali ostatak se ne baca \u2013 od glave i kostiju kuhamo fini temeljac. Pri izradi jelovnika nastojim \u0161to vi\u0161e sastojaka dobiti od lokalnih OPG-ova, dok je za\u010dinsko bilje iz mog vrta s terase Oleander, a sve u \u017eelji da bude doma\u0107e i da se pritom smanji \u0161tetan utjecaj na okoli\u0161. Srdele i kozice sti\u017eu iz Jadrana, janjetina dolazi iz Gorskog kotara, dok kozji sir nabavljamo iz jednog maloga gospodarstva pored Zagreba.\u201d\u00a0<\/i><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Prolje\u0107e je prilika da se Ana poigra sa sastojcima i tehnikama kuhanja, a mnogo toga priprema sa svojim timom u vlastitoj radionici. Srdelice, primjerice, marinira u soli i \u0161e\u0107eru da bi iz njih izvukla vlagu, a poslu\u017euje ih s doma\u0107im pestom od per\u0161ina i marmeladom od raj\u010dice koju sama priprema. Njoki od ljubi\u010dastog krumpira ru\u010dno su ra\u0111eni, a dolaze u spoju s doma\u0107im kozjim sirom i ikrom pastrve. Ovaj put Ana priprema tunu kao arty mozaik \u2013 prvo je marinira u soli, re\u017ee na trakice i obla\u017ee algama, potom je kuha sous vide i re\u017ee na plo\u0161ke, a svje\u017einu tuni dodatno daju sok od krastavaca, menta i doma\u0107e poto\u010darke. Lagano pe\u010deni gof dolazi na tanjuru s karameliziranim mladim zeljem, dok je romb u zanimljivoj kombinaciji s keljom i bijelim grahom. Arti\u010doke se kuhaju u soku od za\u010dinskog bilja i poslu\u017euju uz mladu janjetinu.<\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Uz kreativne i iznena\u0111uju\u0107e spojeve Ana je vodila ra\u010duna o tome da dio jela bude prilago\u0111en vegetarijanskoj prehrani i onima koji jedu prema halal standardima kao i osobama koje ne jedu gluten. Svakako vrijedi istaknuti legendarne Esplanadine \u0161trukle u bezglutenskoj varijanti koje su podjednako ukusne kao i one s p\u0161eni\u010dnim bra\u0161nom.\u00a0<i>\u201eHotel Esplanade oduvijek je bio prepoznatljiv po vrhunskoj usluzi, a to podrazumijeva i prilagodbu u skladu s potrebama i \u017eeljama gostiju. Volim re\u0107i da smo jedan od rijetkih restorana koji svoju ponudu mo\u017ee prilagoditi potrebama i navikama gostiju, a na\u0161e osoblje upoznato je sa standardima razli\u010ditih prehrana, stoga nam gosti dolaze s povjerenjem\u201d<\/i>, istaknuo je\u00a0<b>voditelj restorana Ivan Trbu\u0161i\u0107<\/b>, koji je prvo lice Le Bistroa ve\u0107 punih dvadeset i dvije godine.<\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Njegova \u0161armantna i dobro uhodana ekipa na predstavljanju novog jelovnika poslu\u017eila je gostima selekciju odli\u010dnih vina koja je osigurala\u00a0<b>vinarija Vo\u0161tini\u0107 Klasni\u0107<\/b>. Ova vinarija i galerija svoje vinograde njeguje na obroncima Ivani\u0107-Grada, a u moderno ure\u0111enom prostoru na samo sat vremena od Zagreba uz izradu vina vrhunske kvalitete redovito odr\u017eava edukativne radionice i ku\u0161anja. Gosti su ovaj put imali priliku ku\u0161ati dobro poznati Fraktal prvi pjenu\u0161avi \u0160krlet ikada napravljen, potom etikete Unikata, \u0160krleta, Reda te Mu\u0161kata, laganog desertnog vina koji je poslu\u017een uz selekciju slastica.<\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Kreativan niz slatkih delicija priprema Esplanadin slasti\u010darski tim na \u010delu s\u00a0<b>Mirjanom \u0160poljar<\/b>. Za sve one koji moraju zaokru\u017eiti jelo ne\u010dim slatkim, proljetni jelovnik donosi doma\u0107i sladoled od manga i kokosa s krekerom od kardamoma i malinama, tu je\u00a0<i>mille-feuille<\/i>\u00a0s bijelom \u010dokoladom i kremom od pitaje, potom namelaka s bijelom \u010dokoladom, jagodama i rabarbarom, so\u010dni kola\u010d s mrkvom, naran\u010dom i pr\u017eenim bademima, te neizostavni Esplanadin hit \u2013 topli \u010dokoladni kola\u010d, ovaj put u spoju s jagodama i kremom od vanilije i mente.<\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Selekcija bezvremenskih\u00a0<b>klasika Le Bistroa<\/b>\u00a0sadr\u017ei stalnu ponudu jela pripremanih po tradicionalnim i starim isprobanim recepturama. Tatarski biftek, be\u010dki odrezak s pire-krumpirom, Cezar salata, slasni zape\u010deni\u00a0<b>Esplanadini \u0161trukli<\/b>\u00a0i francuski klasik \u2013 zape\u010dena luk juha \u2013 neka su od jela kojima popularnost nikad ne opada.<\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\"><b>Karta pi\u0107a<\/b>\u00a0bogata\u00a0<b>vrhunskim vinima, pjenu\u0161cima i \u0161ampanjcima na \u010da\u0161e<\/b>\u00a0dodatno \u0107e upotpuniti iskustvo objedovanja. U stalnoj ponudi Le Bistroa nalazi se i\u00a0<b><i>Dnevni meni<\/i><\/b>\u00a0\u2013 tri slijeda dnevno svje\u017eih jela po izboru \u0161efa kuhinje, koji stoji\u00a0<b>215 kn<\/b>, a uklju\u010duje \u010da\u0161u ku\u0107nog vina te kavu ili \u010daj. Uz to, ambijent francuskog \u0161ika svakodnevno poziva goste na u\u017eivanje u\u00a0<b>rasko\u0161nom doru\u010dku, vrhunskoj kavi<\/b>\u00a0i dnevnoj selekciji primamljivih\u00a0<b>kola\u010da<\/b>. Njezini kreativni i ma\u0161toviti jelovnici posljednjih su godina zadivili\u00a0<b>brojne goste i poznate osobe<\/b>\u00a0iz svijeta estrade te \u010dlanove kraljevskih obitelji poput \u0161vedskoga kralja i kraljice, japanskoga princa i princeze, princa Saudijske Arabije, kraljevskoga para iz Danske te mnogih drugih koji nisu ostali ravnodu\u0161ni na Aninu domi\u0161ljatost u pripremi jela. Ana je primila niz priznanja za osobnost, izvrsnost i stil kuhanja. Njen Zinfandel&#8217;s je 2021. dobio prvu zelenu Michelin zvjezdicu u Hrvatskoj.
