Sahajd\u00e1k u Zagreb dolazi sa svojim timom kreativnih <em>chefova<\/em> kako bi s <a href=\"https:\/\/zinfandels.hr\/chef\/\"><strong>Anom Grgi\u0107 Tomi\u0107<\/strong><\/a>, prvom damom Esplanadine kuhinje i cheficom godine 2022. prema izboru Gault &amp; Millau, pripremao ekskluzivnu gurmansku ve\u010deru u <a href=\"https:\/\/zinfandels.hr\/\"><strong>restoranu Zinfandel&#8217;s<\/strong><\/a>.<\/span><\/p>\n<p><span style=\"color: #000000;\"><em>Chef<\/em> Old\u0159ich Sahajd\u00e1k potpisuje cijeli jelovnik i za ovu prigodu priprema neka od svojih autorskih jela, kao i neke novitete u koje unosi da\u0161ak \u010de\u0161ke kuhinje na vlastiti na\u010din. Gala ve\u010dera ujedno \u0107e biti jedinstvena prilika za goste da uz svaki slijed ku\u0161aju neka od priznatih <strong>\u010de\u0161kih vina, kao i piva vrhunske kvalitete<\/strong>. Tartufi, \u010dvarci, patka, mak te tamno pivo s medom i lje\u0161njacima samo su neke od namirnica kojima \u0107e se ovaj virtuozni <em>chef<\/em> poigrati tijekom ve\u010deri.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\">\u201e<em>Hotel Esplanade ve\u0107 godinama priprema gala ve\u010dere uz gostovanja poznatih <\/em>chefova<em> s Michelinovim zvjezdicama. Drago mi je \u0161to nastavljamo tu tradiciju i \u0161to \u0107e na\u0161i gosti mo\u0107i u\u017eivati u jo\u0161 jednoj gurmanskoj poslastici, osobito jer ovaj put jela dolaze u spoju s pivom i vinom iz \u010ce\u0161ke. Mnogi znaju da je \u010ce\u0161ka poznata po pivu, ali nisu imali priliku ku\u0161ati odli\u010dno pivo koje sti\u017ee iz autenti\u010dne <strong>\u010de\u0161ke pivovare Fenetra<\/strong>, kao ni vino koje tako\u0111er dolazi iz <strong>priznatih \u010de\u0161kih vinarija<\/strong> poput <strong>Petr Kor\u00e1b, vina Loigi, Petr Ko\u010da\u0159\u00edk i Dva Duby<\/strong>. Sigurna sam da \u0107e se i ove godine tra\u017eiti stol vi\u0161e\u201d,<\/em> naglasila je <a href=\"https:\/\/esplanade.hr\/hr\/gourmet-koncept\/\"><strong><em>chefica<\/em> Ana Grgi\u0107 Tomi\u0107<\/strong><\/a>.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><strong><em>Chef<\/em><\/strong><strong> Old\u0159ich Sahajd\u00e1k<\/strong> suvlasnik je restorana La Degustation Boh\u00eame Bourgeoise, otvorenog 2006. godine, na dan kada mu se rodio sin. Moglo bi se re\u0107i da mu je kuhanje zapisano u genima. Naime, njegovi roditelji, kao i baka i djed, tako\u0111er su bili kuhari i <em>chefovi<\/em>, te je odrastao gaje\u0107i ljubav prema hrani. Kao dijete provodio je mnogo vremena uz obitelj u kuhinji, isprobavaju\u0107i nova jela. Iako je u svojim tinejd\u017eerskim danima \u017eelio postati nogometna zvijezda, to mu se nije ostvarilo. Kako sam nagla\u0161ava, tada mu je preostalo samo jedno \u2013 da postane vrhunski <em>chef<\/em>. Od 1989. godine bavi se kuhanjem, a vrlo brzo odlu\u010dio je napustiti svoju rodnu \u010ce\u0161ku te putovati svijetom i u\u010diti o kulinarskom zanatu. Nakon \u0161to je proveo tri godine u Njema\u010dkoj, oti\u0161ao je u Novi Zeland, zatim u SAD te Italiju i Portugal. Umjesto da sanja o radu u velikim, poznatim restoranima, <em>chef<\/em> Old\u0159ich odabrao je manja mjesta u selima, gdje je upoznao lokalnu tradicionalnu hranu svake zemlje i u\u010dio kuhati s nekima od najboljih <em>chefova<\/em>. Takvo na\u010delo njeguje i danas, a u svom restoranu poslu\u017euje isklju\u010divo tradicionalna jela sa svje\u017eim sezonskim namirnicama. Sahajd\u00e1k se potom odlu\u010dio vratiti u \u010ce\u0161ku, a 1996. je po\u010deo raditi za Roc Ambiente Company, jednu od najrespektabilnijih restoranskih tvrtki u \u010ce\u0161koj. Godine 2003. poha\u0111ao je CIA (Culinary Institute of America) u gradu St. Helena u Kaliforniji. Putuju\u0107i svijetom i istra\u017euju\u0107i najbolje gastrodo\u017eivljaje, odlu\u010dio je da je vrijeme da i Prag dobije jedno takvo mjesto \u2013 restoran u kojem se priprema hrana s najboljim lokalnim proizvodima i gdje se o gostima brine kao o prijateljima. Vlasnici grupe Ambiente pristali su postati njegovi poslovni partneri te je od 2006. godine postao suvlasnik restorana La Degustation Boh\u00eame Bourgeoise. <em>Chef<\/em> Old\u0159ich Sahajd\u00e1k isti\u010de da pri osmi\u0161ljavanju jela zadire duboko u povijest svoje zemlje i Austro-Ugarskog Carstva. Pri kreiranju jelovnika bira tradicionalna jela upravo iz tih zemalja i spaja ih modernim tehnikama, tvore\u0107i vrhunski gastrodo\u017eivljaj koji je danas prepoznat u cijelom svijetu. Kod <em>chefa<\/em> Old\u0159icha Sahajd\u00e1ka u obzir dolaze samo lokalne i sezonske namirnice, a u prilog tome govori i to da kona\u010dni jelovnik odobrava svakodnevno, i to tek nakon \u0161to se uvjeri u dostupnost svje\u017eih lokalnih namirnica tog dana. U prilog popularnosti govori i to da gotovo da ne postoji poznata osoba koja za vrijeme boravka u Pragu ne posjeti i restoran La Degustation Boh\u00eame Bourgeoise, \u0161to je svakako potvrda njegovoj kvaliteti i presti\u017eu koji njeguje u javnosti. <em>Chef<\/em> i njegov tim redovito gostuju u poznatim restoranima Europe i ostatka svijeta, od Londona do Singapura. Jela ne voli potpisivati jer \u017eeli svakodnevno rasti, isprobavati razli\u010dite namirnice i stapati ih u nove okuse, no ipak tartar od govedine i sendvi\u010d s tartufima njegova su autorska jela koja se poslu\u017euju od samog otvaranja restorana, pa je preko njih na neki na\u010din postao i prepoznatljiv.<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>Restoran La Degustation Boh\u00eame Bourgeoise<\/strong> nalazi se u srcu Praga, a poznat je kao mjesto tradicionalne \u010de\u0161ke kuhinje na osebujan na\u010din. Godine 2012. prepoznata je njegova kvaliteta te je nagra\u0111en Michelinovom zvjezdicom koju posjeduje i danas. Jedan je od samo dva restorana u \u010ce\u0161koj nagra\u0111enih spomenutim gastropriznanjem. Iako je poznat kao vrhunsko gastronomsko mjesto, u restoranu se njeguje opu\u0161tena atmosfera. Posjetitelje se poti\u010de da odre\u0111ena jela jedu rukama, ba\u0161 kao \u0161to bi to \u010dinili da ru\u010daju ili ve\u010deraju kod ku\u0107e. <em>Chefovi<\/em> i osoblje smatraju sve svoje goste prijateljima te se tako prema njima i odnose. Restoran broji 35 mjesta, a poslu\u017euje pet menija i 12 do 15 <em>amuse-bouchesa<\/em>, odnosno malih zalogaja. <em>Chefov<\/em> je obi\u010daj da svaki meni bude jedinstven i da se sastojci ne ponavljaju, ako ne ra\u010dunamo osnovne. Jelovnik je pomno uskla\u0111en s godi\u0161njim dobima, uz svakodnevne minimalne izmjene. Svako jelo osmi\u0161ljeno je na dan same pripreme, a ovisi o dostupnosti namirnica. \u010cesto <em>chefovi<\/em> sami ubiru gljive, love ribe iz lokalnih rijeka i jezera, a sve s ciljem da posjetiteljima pru\u017ee pravi gastrodo\u017eivljaj \u010ce\u0161ke, po\u0161tuju\u0107i njezinu tradiciju i bogatu kulinarsku povijest. Svako jelo pri\u010da svoju pri\u010du.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\">Ekskluzivna gala ve\u010dera odr\u017eat \u0107e se <strong>u srijedu, 26. travnja 2023. u <a href=\"https:\/\/esplanade.hr\/hr\/gourmet-koncept\/\">restoranu Zinfandel\u2019s<\/a> s po\u010detkom u 20 sati.<\/strong> Ve\u010der zapo\u010dinje <strong>dobrodo\u0161licom u <a href=\"https:\/\/esplanade1925.hr\/\">Lounge &amp; Cocktail Baru<\/a><\/strong>, a nastavlja se <strong>ve\u010derom od pet sljedova<\/strong>. Cijena ve\u010dere iznosi <strong>195 EUR po osobi<\/strong> te uklju\u010duje odabrano vino i pivo uz svaki slijed te vodu, kavu, \u010daj i <em>petit fourse<\/em>.
