{"id":11198,"date":"2023-06-19T16:37:35","date_gmt":"2023-06-19T14:37:35","guid":{"rendered":"https:\/\/esplanade.hr\/hr\/?p=11198"},"modified":"2023-06-19T16:47:11","modified_gmt":"2023-06-19T14:47:11","slug":"chefica-ana-grgic-tomic-u-novom-jelovniku-predstavila-kolekciju-privlacnih-autorskih-jela","status":"publish","type":"post","link":"https:\/\/esplanade.hr\/hr\/chefica-ana-grgic-tomic-u-novom-jelovniku-predstavila-kolekciju-privlacnih-autorskih-jela\/","title":{"rendered":"Chefica Ana Grgi\u0107 Tomi\u0107 u novom jelovniku predstavila kolekciju privla\u010dnih autorskih jela"},"content":{"rendered":"<p>Rakovica s dimljenom raj\u010dicom, tartar od usoljenih kozica s aiolijem od citrusa, mango, krema od kokosa, gu\u0161\u010dja jetra u umaku od marelica, <em>gnudi<\/em> od vrganja, doma\u0107i rezanci od medvje\u0111eg luka, obrazi od grdobine s pjenom od kukuruza, <em>panna cotta <\/em>s bagremom i pe\u010dene marelice sa sladoledom od kamilice samo su dio kolekcije novih jela koja \u0107e zasigurno odu\u0161eviti sve <em>foodieje <\/em>u potrazi za novim okusima<em>.\u00a0 <\/em>Aninu kvalitetu, kreativnost i doprinos gastrosceni nedavno su prepoznali u istaknutoj zajednici koja sastavlja popis najboljih svjetskih restorana, <em>La Liste Mediterranean,<\/em> te su joj dodijelili priznanje u kategoriji \u201eNovi talent godine\u201d<\/p>\n<p>Le Bistro je tijekom gotovo \u010detiri desetlje\u0107a stekao status kultnog mjesta me\u0111u brojnim gostima, a posebno Zagrep\u010danima, od kojih ga mnogi smatraju svojim drugim dnevnim boravkom, \u0161to zbog \u0161armantnog osoblja, odli\u010dne kave i kola\u010da, ili pak nezaobilaznih \u0161trukla, a \u0161to zbog autenti\u010dnog ambijenta pari\u0161kog \u0161ika. Ono \u0161to posebno privla\u010di u ljetnim mjesecima njegova je <strong>sjenovita terasa s da\u0161kom uli\u010dnog teatra<\/strong> koja u spoju s <strong>novim Aninim <em>\u00e0 la carte<\/em> konceptom <\/strong>te kolekcijom <strong>vrhunskih vina i pjenu\u0161aca na \u010da\u0161e<\/strong> pru\u017ea jedinstven ugo\u0111aj za opu\u0161tanje u srcu Zagreba.<\/p>\n<p><strong>Anin novi jelovnik <\/strong>donosi neke fantasti\u010dne spojeve koji \u0107e vas odu\u0161eviti svojom <em>arty<\/em> prezentacijom i zanimljivim okusima nadahnutim ljetom. \u201e<em>Rakovicu sam spojila s doma\u0107om raj\u010dicom kojoj dajemo specifi\u010dan okus dima. \u0160koljke sv. Jakova upotpunila sam mangom i kremom od kokosa, za egzoti\u010dnu notu. Francuski specijalitet, pe\u010denu gu\u0161\u010dju jetru, ovaj put serviram uz umak od suhih marelica i bijelog papra, \u0161to se izvrsno spaja. Posebno sam vodila ra\u010duna o prehrambenim navikama na\u0161ih gostiju, pa bih od vegetarijanskih jela izdvojila <\/em>gnude<em> od vrganja i skute <\/em><em>s tartufima i kozjim sirom, zatim <\/em>baby<em> salatu s pestom od koprive i pa\u0161kim sirom uz dodatak pinjola, kao i hrskavi so\u010dni kroket s tikvicama i istarskim tartufima koji dolazi uz <\/em>carpaccio<em> od tikvica i poto\u010darke, koje su trenuta\u010dno u jeku sezone. Kremasti ri\u017eoto <\/em><em>ovaj put dolazi s <\/em><em>usoljenom mrkvom i dimljenom talijanskom <\/em>burratom<em>. <\/em><em>Posebno bih izdvojila doma\u0107e rezance od medvje\u0111eg luka koji dolaze iz na\u0161e proizvodnje, a u spoju s pastom od dimljenih srdela i su\u0161enih gro\u017e\u0111ica izazivaju posebnu pa\u017enju. Za sve one \u017eeljne okusa mora, predla\u017eem obraze grdobine u umaku od pe\u010dene raj\u010dice i pjene od kukuruza ili jednu druk\u010diju interpretaciju <\/em><em>filea kova\u010da koji dolazi s krunom od crnog \u010de\u0161njaka, kremom od krumpira i gelom od blitve. So\u010dni june\u0107i biftek dimimo posebnom tehnikom i sla\u017eemo uz konfitirani krumpir, <\/em>demi-glace<em> od ljutike i mrkve uz dodatak ulja dragoljuba, dok se mekani tele\u0107i obrazi, uz koje idu pe\u010dene arti\u010doke i krema od paljenog patlid\u017eana, doslovno tope u ustima<\/em>\u201d, istaknula je Esplanadina <em>chefica<\/em> Ana Grgi\u0107 Tomi\u0107 s osmijehom na licu te jo\u0161 jednom pokazala kako istinski u\u017eiva u onome \u0161to stvara.<\/p>\n<p>Pritom valja istaknuti da su kreativnost simpati\u010dne i iskusne prve dame Esplanadine kuhinje primijetili i u zajednici koja sastavlja popis najboljih svjetskih restorana, <a href=\"https:\/\/www.laliste.com\/en\/\"><strong><em>La Liste Mediterranean<\/em><\/strong><\/a>, pa je tako <strong><a href=\"https:\/\/esplanade.hr\/food-concept\/chef-ana-grgic\/\">Ani Grgi\u0107 Tomi\u0107<\/a> nedavno dodijeljeno priznanje u kategoriji \u201eNovi talent godine<\/strong><strong>\u201d<\/strong> u konkurenciji \u201eNovi talenti u regiji Mediterana\u201d (Mediterranean Awards 2023), \u010dime je ponovno prepoznata njezina kvaliteta i inovativnost u kreiranju autorskih jela, kao i doprinos gastrosceni.<\/p>\n<p>Uz predjela i glavna jela, novi jelovnik Le Bistroa donosi i <strong>neizostavnu kolekciju prefinih slastica<\/strong> kojima svakako valja zaokru\u017eiti ru\u010dak ili ve\u010deru. \u201e<em>Te\u0161ko da mogu neki desert posebno istaknuti jer svi su odli\u010dni, pravi ljetni, no mo\u017eda je najve\u0107i desertni hit ipak <\/em>crumble<em> od kokosa u kombinaciji sa svje\u017eim borovnicama i doma\u0107im sladoledom od borovnice koji sami pravimo u na\u0161oj slasti\u010darnici. Lagana <\/em>panna cotta<em> od bagrema upotpunjena so\u010dnom kremom od breskve i bijele \u010dokolade dolazi u spoju s <\/em>crumbleom<em> od limuna i timijana, koji ovom desertu daju posebnu mediteransku notu. Svakako preporu\u010dam ku\u0161ati karamelizirano tijesto s kremom od kravlje skute, pe\u010denim neretvanskim marelicama i opet na\u0161im doma\u0107im sladoledom od kamilice, kao i biskvit od pe\u010dene naran\u010de i badema aromatiziran paprom i cimetom uz kremu od pe\u010dene naran\u010de. Ma svi su deserti odli\u010dni i osvje\u017eavaju\u0107i, vjerujem da \u0107e samo rijetki mo\u0107i odoljeti da ih ne ku\u0161aju<\/em>\u201d, dodala je Ana.<\/p>\n<p>Le Bistro uz novu ponudu <em>\u00e0 la carte<\/em> nudi i <strong>provjereno dobru kolekciju neizostavnih klasika<\/strong> kojima popularnost ne opada, poput tatarskog bifteka, francuskog klasika \u2013 zape\u010dene luk juhe, Cezar salate i slavnog be\u010dkog odreska s kremastim krumpirom. Zagreba\u010dki bistro poznat je i po legendarnim zape\u010denim <a href=\"https:\/\/esplanade.hr\/bistro\/esplanade-strukli\/\"><strong>Esplanadinim \u0161truklima<\/strong><\/a>, koje su tijekom proteklih godina isprobala i neka od najpoznatijih imena sa scene svjetskog \u0161oubiznisa, a koje dolaze i u bezglutenskoj varijanti, kao i u onoj zamrznutoj pa \u0161trukle mo\u017eete dovr\u0161iti kod ku\u0107e. Isto tako, dan mo\u017eete zapo\u010deti u Le Bistrou uz primamljivi <a href=\"https:\/\/www.esplanade.hr\/press\/download\/menus\/Esplanade-Zagreb-Le-Bistro-breakfast-menu.pdf\"><strong><em>\u00e0 la carte<\/em> doru\u010dak<\/strong><\/a> i selekciju koja uklju\u010duje hrskavi tost s finom kremom od avokada, po\u0161iranim jajetom i pr\u017eenom pancetom, zatim omlet s povr\u0107em ili slasna jaja Benedict, poslu\u017eena na toplom <em>briocheu<\/em> s maslacem, zatim svje\u017ee cije\u0111eni sok, a tu je i slasni francuski tost s medom i marmeladom od naran\u010de, kao i fine pala\u010dinke s bobi\u010dastim vo\u0107em i javorovim sirupom. Doru\u010dak se poslu\u017euje svaki dan od 9 do 11 sati. U stalnoj ponudi Le Bistroa nalazi se i <strong>Dnevni meni<a href=\"https:\/\/esplanade.hr\/bistro\/menu-du-jour\/\"> (<em>Menu du Jour<\/em>)<\/a><\/strong> s tri slijeda dnevno svje\u017eih jela po izboru \u0161efa kuhinje uz \u010da\u0161u ku\u0107nog vina Krauthaker te kavu ili \u010daj za <strong>svega 34 EUR<\/strong>. Dnevni menu u ponudi je svaki dan od 12 \u2013 18 sati.
