{"id":12027,"date":"2024-05-09T13:56:16","date_gmt":"2024-05-09T11:56:16","guid":{"rendered":"https:\/\/esplanade.hr\/hr\/?p=12027"},"modified":"2024-05-23T07:49:12","modified_gmt":"2024-05-23T05:49:12","slug":"zinfandels-donosi-kolekciju-novih-senzacija-s-potpisom-chefice-ane-grgic-tomic","status":"publish","type":"post","link":"https:\/\/esplanade.hr\/hr\/zinfandels-donosi-kolekciju-novih-senzacija-s-potpisom-chefice-ane-grgic-tomic\/","title":{"rendered":"Zinfandel&#8217;s donosi kolekciju novih senzacija s potpisom chefice Ane Grgi\u0107 Tomi\u0107"},"content":{"rendered":"<p>[vc_row][vc_column][vc_column_text]<\/p>\n<p style=\"text-align: justify;\"><strong>Klije\u0161ta kraljevskog raka, pe\u010deni izdanci rapini brokule, mlada kopriva, svje\u017ee jadranske kozice, kokos, tartuf, pe\u010dena dinja, ragu od hlapa, file grdobine, kozli\u0107, <\/strong><strong>konfitirani patlid\u017ean, pe\u010dena lavlja griva, karamelizirana krema od kukuruza, bijela dehidrirana \u010dokolada s <em>matcha <\/em>prahom, menta i maline <\/strong><strong>samo su dio novog <\/strong><strong>jelovnika u kojem <em>chefica<\/em> Ana Grgi\u0107 Tomi\u0107 pa\u017eljivo spaja odabrane i svje\u017ee vrhunske sastojke u fantasti\u010dne sljedove zbog kojih \u0107ete ove sezone po\u017eeljeti posjetiti Zinfandel&#8217;s, restoran s oznakom zelene Michelinove zvjezdice. <\/strong><\/p>\n<p style=\"text-align: justify;\">Poznata Esplanadina c<em>hefica<\/em> Ana Grgi\u0107 Tomi\u0107 upravo je krenula s novim izdanjem <em>\u00e0 la carte<\/em> jelovnika koji \u0107e vas zasigurno privu\u0107i svje\u017eim sezonskim sastojcima, njezinim posebnim stilom i uzbudljivim spojevima koji u Zagreb donose da\u0161ak Mediterana.<\/p>\n<p style=\"text-align: justify;\">Ova \u0161armantna \u0161efica kuhinje za svoju je gastronomsku virtuoznost i kreativnost primila brojna priznanja, od kojih se posebno isti\u010de ono posljednje, <em>\u00c9toile Blanche,<\/em> koje joj je uru\u010dila Svjetska gastronomska organizacija na dodjeli European Hotel Awards 2023. u Barceloni. Unato\u010d tomu, skromna Ana uvijek iskreno priznaje da joj je najdra\u017ei dio njezinog posla ipak rad u kuhinji, priprema jela i osmi\u0161ljanje novih jelovnika sa svojim kuharskim timom.<\/p>\n<p style=\"text-align: justify;\"><em>\u201ePomno birani sastojci spojeni u zanimljive kombinacije koje na tanjur donose privla\u010dne teksture, rasko\u0161ne boje i iznena\u0111uju\u0107e okuse ono su \u010dime sam se ponajprije vodila pri izradi novog jelovnika. Nadahnu\u0107a, moram priznati, nije nedostajalo, osobito jer ovo doba godine povezujem s bu\u0111enjem prirode i moje kreativne crte, pri \u010demu svoju ma\u0161tu u potpunosti prenosim na tanjur. Blisko sura\u0111ujem s odli\u010dnim lokalnim dobavlja\u010dima koji nam \u0161alju samo najbolje namirnice, tako da je priprema novih jela uvijek poseban u\u017eitak<\/em>. <em>Pri izradi svakog slijeda nastojala sam upotrijebiti sezonske sastojke, a dio toga pripremamo u vlastitoj radionici uz posebne tehnike izrade<\/em><em>\u201d,<\/em> isti\u010de <em>chefica<\/em> Ana Grgi\u0107 Tomi\u0107 i dodaje da veliku pa\u017enju posve\u0107uje odr\u017eivosti, maksimalnoj iskoristivosti sastojaka, simfoniji okusa te samoj prezentaciji jela, zbog \u010dega je i ovaj put pa\u017eljivo birala dizajn i boju tanjura.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\"><em>\u201eU novom jelovniku posebno bih izdvojila <strong>klije\u0161ta kraljevskog raka<\/strong><\/em>,<em> jedan fantasti\u010dan slijed koji u spoju sa sokom od jabuke i celera uz <\/em>mousse<em> od gra\u0161ka i <\/em>matcha<em> \u010daj pru\u017ea kombinaciju intenzivnih okusa. Uz to, tu je i ukusni <strong>ragu od hlapa<\/strong> u kojem se hlap vrlo jednostavno priprema, kako bi se sa\u010duvao izvorni okus. Pri\u010du sam zaokru\u017eila doma\u0107om tjesteninom, koju izra\u0111ujemo u na\u0161oj kuhinji, uz prah od su\u0161ene raj\u010dice i listova korijandra. <\/em>O<em>sim glavnih namirnica, u pripremi jela posebno su va\u017eni i svje\u017ei za\u010dini poput <strong>ru\u017emarina, bosiljka, mente i \u010dili papri\u010dica<\/strong> koje tijekom prolje\u0107a i ljeta pa\u017eljivo njegujemo u na\u0161em vrtu na Oleander terasi, dok drugi dio svje\u017eeg za\u010dinskog bilja poput <strong>koprive, medvje\u0111eg luka, bagrema i bazge<\/strong> za nas bere i dostavlja OPG na koji se uvijek mogu osloniti<\/em>.\u201d<\/p>\n<p style=\"text-align: justify;\">Oslu\u0161kuju\u0107i goste, Ana rado isti\u010de i <strong>vegetarijanske opcije jela<\/strong>:<em> \u201e<strong>Kremasti kroket od tartufa<\/strong> <strong>i kozjeg sira<\/strong> <strong>s <\/strong><\/em><strong><em>gelom od pe\u010dene ljutike i dodatkom svje\u017eeg tartufa<\/em><\/strong> <em>ne\u0161to je \u0161to \u0107e se, vjerujem, svidjeti mnogima, osobito jer svje\u017ee kozje mlijeko dolazi iz lokalnog OPG-a i daje zaista odli\u010dnu aromu jelu. Tu su jo\u0161 neka vrlo zanimljiva jela koja svakako vrijedi ku\u0161ati ako ste ljubitelj vege varijanti \u2013 <strong>pe\u010deni izdanci rapini brokule s <\/strong><\/em><strong><em>kremom od brokule uz <\/em><\/strong><strong>b\u00e9arnaise<em> od crnog \u010de\u0161njaka te <\/em>crumble<em> od panko mrvica i sme\u0111eg maslaca<\/em><\/strong><em>, kao i <\/em><strong><em>konfitirane raj\u010dice, marinirane sa sirupom od vanilije i tonke uz sorbet od raj\u010dice, cvijet komora\u010da, \u017eele od maslinovog ulja i \u0161paroge<\/em><\/strong>.\u201d<\/p>\n<p><strong>\u00a0<\/strong>[\/vc_column_text]<div class=\"eltd-image-gallery  eltd-ig-slider-type eltd-large-space     \">\n\t<div class=\"eltd-ig-slider eltd-owl-slider\" data-number-of-items=\"1\" data-enable-loop=\"yes\" data-enable-autoplay=\"yes\" data-slider-speed=\"5000\" data-slider-speed-animation=\"600\" data-slider-padding=\"no\" data-enable-navigation=\"yes\" data-enable-custom-navigation=\"no\" data-enable-pagination=\"yes\" data-slider-animate-out=\"fadeOut\">\n\t\t\t\t\t<div class=\"eltd-ig-image\">\n\t\t\t\t\t\t\t\t\t<img src=\"https:\/\/esplanade.hr\/hr\/wp-content\/uploads\/2024\/05\/4X9A0078web-1100x900.jpg\" alt=\"\" width=\"1100\" height=\"900\" \/>\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<div class=\"eltd-ig-image\">\n\t\t\t\t\t\t\t\t\t<img src=\"https:\/\/esplanade.hr\/hr\/wp-content\/uploads\/2024\/05\/4X9A9755web-1100x900.jpg\" alt=\"\" width=\"1100\" height=\"900\" \/>\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<div class=\"eltd-ig-image\">\n\t\t\t\t\t\t\t\t\t<img src=\"https:\/\/esplanade.hr\/hr\/wp-content\/uploads\/2024\/05\/4X9A9924web-1100x900.jpg\" alt=\"\" width=\"1100\" height=\"900\" \/>\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<div class=\"eltd-ig-image\">\n\t\t\t\t\t\t\t\t\t<img src=\"https:\/\/esplanade.hr\/hr\/wp-content\/uploads\/2024\/05\/4X9A0014web-1100x900.jpg\" alt=\"\" width=\"1100\" height=\"900\" \/>\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<div class=\"eltd-ig-image\">\n\t\t\t\t\t\t\t\t\t<img src=\"https:\/\/esplanade.hr\/hr\/wp-content\/uploads\/2024\/05\/4X9A9830web-1100x900.jpg\" alt=\"\" width=\"1100\" height=\"900\" \/>\t\t\t\t\t\t\t<\/div>\n\t\t\t<\/div>\n<\/div>[\/vc_column][\/vc_row][vc_row][vc_column][\/vc_column][\/vc_row][vc_row][vc_column][vc_empty_space][vc_column_text]<\/p>\n<p style=\"text-align: justify;\">Anin nagra\u0111ivani <strong>ri\u017eoto<\/strong>, koji se i 2022. godine na\u0161ao u poznatom gurmanskom vodi\u010du <em>Guida Gallo<\/em> koji slavi najbolja ri\u017eota diljem svijeta, ove je sezone u Zinfandel&#8217;sovu jelovniku dobio novu zelenu ina\u010dicu upotpunjenu <strong>mladom koprivom, svje\u017eim jadranskim kozicama s citrusima i gelom od kokosa.<\/strong> <em>\u201eCijeli postupak pripreme jela vrlo je specifi\u010dan. Od mlade koprive radim finu kremu koju na kraju umije\u0161am u so\u010dni ri\u017eoto dok istodobno pripremam tempuru od koprive, koja na koncu poprima savr\u0161enu notu herbalnosti i hrskavosti. Uz pa\u017eljivo marinirane kozice u svje\u017eem soku od citrusa, ovo nutritivno bogato jelo zasigurno \u0107e biti tra\u017een izbor s novog jelovnika\u201d, <\/em>isti\u010de <em>chefica.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\">Za istinski okus mora, tu su<strong> po\u0161irani list s <em>mousseom<\/em><\/strong> <strong>od limunske trave i cvijetom od tikvica<\/strong> te <strong>f<\/strong><strong>ile grdobine s timut paprom u spoju s pastrnjakom<\/strong> pe\u010denim u kori, mariniranim s medom i naran\u010dom.<\/p>\n<p style=\"text-align: justify;\"><strong>Proljetne \u0161paroge<\/strong> Ana je ukomponirala u finu <strong>kremastu juhu koja uz dodatak<\/strong> <strong>kozjeg sira<\/strong> postaje neodoljivo jelo za okrepu, a tu je i vrlo tra\u017eena <strong><em>bisque<\/em> juha od rakova s dimljenim dagnjama i kremom od \u010de\u0161njaka<\/strong>, koja se polako svrstava me\u0111u Esplanadine klasike, me\u0111u kojima su ru\u010dno <strong>kosani tatarski biftek<\/strong> od najboljeg mesa i biranih za\u010dina, koji se priprema pred gostima, zatim <strong>brancin pe\u010den u soli<\/strong> koji je svojevrstan specijalitet, posebno me\u0111u inozemnim gostima, kao i kremasti <strong>istarski fu\u017ei s tartufima<\/strong> te kultni <strong>Esplanadini \u0161trukli<\/strong> zape\u010deni u kremastom vrhnju, koji dolaze i u ina\u010dici s bra\u0161nom bez glutena.<\/p>\n<p style=\"text-align: justify;\"><strong><em>Wagyu Entrec\u00f4te no<\/em><\/strong><em>.<strong> 4<\/strong><\/em> odu\u0161evit \u0107e ljubitelje <em>steakova<\/em>, a u Aninu novom jelovniku dolazi s konfitiranim mladim porilukom, kremastim krumpirom i ukiseljenom goru\u0161icom. Uz to, tu je i <strong>so\u010dni june\u0107i biftek<\/strong> s <strong>ukusnim umakom od porta, pe\u010denom lavljom grivom<\/strong> mariniranom sa sojom i sezamom, dok je posebna poslastica <strong>kozli\u0107 mariniran sa za\u010dinskim biljem i sirutkom s patlid\u017eanom i hrskavim arti\u010dokama<\/strong>.<\/p>\n<p style=\"text-align: justify;\"><strong>Desertni jelovnik najsla\u0111a je nota <\/strong>pri\u010de o gastronomskom do\u017eivljaju restorana Zinfandel&#8217;s. Kreativna desertna karta koju potpisuje <strong><em>pastry chefica<\/em> Mirjana \u0160poljar <\/strong>ovaj put donosi slatke spojeve <strong>manga, \u010dokolade, \u017eitarica, jogurta, limete<\/strong>, a jedan od izdvojenih favorita koji \u0107e odu\u0161eviti mnoge jest <strong>privla\u010dan biskvit od bosiljka<\/strong> s dehidriranim malinama i karamelom od maline i <em>aceta<\/em>. Ako ste skloniji \u010dokoladnim okusima, na popisu slatkoga birajte <strong><em>flexi ganache<\/em> od \u010dokolade<\/strong> s karameliziranim \u017eitaricama i kremom od manga. Profinjeni okusi manga stapaju se s bijelom \u010dokoladom, pa nema sumnje da \u0107e upravo ovoj slatkoj kombinaciji rijetki uspjeti odoljeti. Ako \u017eelite samo osvje\u017eiti nepce, odva\u017eite se na rapsodiju hladnih spojeva i birajte <strong>sladoled od jogurta i limete<\/strong> s neodoljivom aromom svje\u017ee maline, mente i bosiljka. Valja spomenuti da nijedna slastica na novom jelovniku <strong>ne bi trebala sadr\u017eavati gluten<\/strong> i da su sve primjerene <strong>vegetarijanskoj <\/strong>prehrani.<\/p>\n<p style=\"text-align: justify;\">Za potpuni do\u017eivljaj, <em>sommelier<\/em> \u0107e vam rado odabrati najbolja vina i pjenu\u0161ce iz Hrvatske i svijeta koji \u0107e savr\u0161eno zaokru\u017eiti iskustvo <em>fine dininga<\/em>. Prepustite se nezaboravnom ozra\u010dju restorana Zinfandel&#8217;s, a za toplih dana planirajte objedovanje u \u010darobnom ambijentu Oleander terase s koje se pru\u017ea o\u010daravaju\u0107i pogled na grad.
