Jakova, velout\u00e9 od tartufa i meda, ri\u017eoto s portom, consomm\u00e9 od fazana, ravioli od kestena, prepeli\u010dja prsa s marelicama i gu\u0161\u010djom jetrom, file jelena s crnim trubama, dimljeni ib\u00e9rico s vrganjima, r\u00f6sti od li\u010dkog krumpira, shiso list tempura \u2013 ovo je tek dio onoga \u0161to vas od ovog tjedna o\u010dekuje u ponudi Zinfandel&#8217;sa.<\/p>\n<p style=\"text-align: center;\">Pritom nikako nemojte propustiti flambirane pala\u010dinke Cr\u00eapes Suzette: vatreni performans pred va\u0161im stolom s novim se jelovnikom vra\u0107a u Zinfandel&#8217;s na velika vrata.<\/p>\n<p>[\/vc_column_text][vc_column_text]<\/p>\n<p style=\"text-align: justify;\"><strong>Ako ste u potrazi za otmjenim kozmopolitskim ugo\u0111ajem s da\u0161kom blagdanskoga glamura koji u spoju s besprijekornom uslugom i uzbudljivom ponudom donosi \u010daroban gurmanski do\u017eivljaj, onda svakako predla\u017eemo da posjetite Esplanadin Zinfandel&#8217;s, \u010dija je <em>chefica<\/em> kuhinje Ana Grgi\u0107 Tomi\u0107 upravo predstavila novi jelovnik <em>\u00e0 la carte<\/em> koji izgleda neodoljivo.<\/strong><\/p>\n<p style=\"text-align: justify;\">Ana je tijekom godina zna\u010dajno oblikovala identitet Zinfandel&#8217;sa. Uz inovativan pristup kuhanju, spoj suvremenih kulinarskih tehnika, po\u0161tuju\u0107i tradiciju i lokalne sastojke te koketiraju\u0107i s mediteranskom kuhinjom, unijela je da\u0161ak \u017eenske osobnosti i kreativnosti vidljive na svakom njenom tanjuru.<\/p>\n<p style=\"text-align: justify;\">Zinfandel&#8217;s je poseban i zbog naglaska na odr\u017eivosti te odnosa prema <em>food waste<\/em> filozofiji, zbog \u010dega je prije nekoliko godina ovom restoranu dodijeljena prva zelena Michelinova zvjezdica.<\/p>\n<p style=\"text-align: justify;\">Ovaj je put Ana u jelovnik uvrstila meso plavog raka, invazivne vrste koja obitava u Jadranskom moru. <em>\u201eS obzirom na to da sam <strong>ambasador WWF-ove inicijative za odr\u017eivo ribarstvo<\/strong>, nastojim pa\u017eljivo i promi\u0161ljeno upotrebljavati ribu i morske plodove te svojim utjecajem potaknuti druge da brinu o budu\u0107nosti ribe na tanjuru i u moru. Primjerice, na jelovnik za <\/em>Fooling Around<em> na terasi Oleander dodala sam sardine. Ve\u0107 godinama od provjerenih ribara uzimam jadranske \u0161kampe, a sada sam u razgovoru s timom iz <strong>WWF-a<\/strong> (Svjetske organizacije za za\u0161titu prirode) odlu\u010dila u jelovnik uvrstiti plavog raka koji, uz to \u0161to je iznimno ukusan, ima i\u00a0va\u017enu ekolo\u0161ku ulogu\u201d<\/em>, nagla\u0161ava Ana Grgi\u0107 Tomi\u0107 i dodaje:\u00a0<em>\u201cKao invazivna vrsta u Jadranskom moru plavi rak\u00a0izaziva promjene u ekosustavu ugro\u017eavaju\u0107i autohtone vrste i ekolo\u0161ku ravnote\u017eu. Uklju\u010divanje plavog raka u prehrambeni lanac stoga poma\u017ee u kontroli broja te vrste, \u010dime se smanjuje njezin utjecaj na okoli\u0161. Ova se vrsta mo\u017ee odr\u017eivo loviti i koristiti. <\/em><strong><em>Meso plavog raka<\/em><\/strong><em> blagog je okusa i \u010dvrste teksture te je vrlo cijenjeno zbog svoje svestranosti u pripremi raznih jela. U novom Zinfandel&#8217;sovu jelovniku spojila sam ga s <strong>kremom od ostalih rakova i dodala nje\u017enu pjenu od ljup\u010daca, fritulu s kremom od pe\u010denog i ukiseljenog celera<\/strong> te sve zaokru\u017eila <strong>Oscietra kavijarom<\/strong> koji dolazi iz odr\u017eivog uzgoja.\u201d,\u00a0<\/em>obja\u0161njava<em>\u00a0chefica.<\/em><\/p>\n<p style=\"text-align: justify;\"><strong>\u00a0<\/strong><\/p>\n<p style=\"text-align: justify;\">Od predjela Ana izdvaja i <strong>jadranske \u0161kampe<\/strong>, koje je ovaj put marinirala s <strong>doma\u0107im pekmezom od \u0161ipka<\/strong>, a dolaze u spoju s torticom i <strong><em>cr\u00e8me br\u00fbl\u00e9eom<\/em> od karameliziranih \u010di\u010doka te uz lje\u0161njak i <em>velout<\/em><\/strong><strong><em>\u00e9<\/em><\/strong><strong> od \u0161kampa<\/strong>. Jadranski \u0161kampi jedna su od Aninih najdra\u017eih namirnica, a love se u Podvelebitskom kanalu vr\u0161ama radi za\u0161tite mikroekosustava.<\/p>\n<p style=\"text-align: justify;\">Anina kreativnost dolazi do izra\u017eaja u svakom slijedu dok s lako\u0107om spaja naizgled nespojivo, a rezultat su fantasti\u010dni okusi i teksture koje donose da\u0161ak umjetnosti na tanjur. <strong>Po\u0161iranu \u0161koljku sv. Jakova<\/strong> nagla\u0161ava fini <strong><em>mousse<\/em> od tartufa<\/strong>, dok svoj poznati <strong>kremasti ri\u017eoto<\/strong> Ana ovaj put priprema s gorkom kremom od radi\u010da i <strong>porta uz kremu od gu\u0161\u010dje jetre<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Zimi se valja ugrijati uz <strong>juhu, onu od pe\u010denog kukuruza s paljenim kukuruzom i marmeladom od \u010dilija<\/strong> i amarant ili uz okusom sna\u017ean <strong><em>consomm\u00e9<\/em> od fazana<\/strong> s doma\u0107im raviolima punjenim kremom od kestena i mesom fazana \u2013 bilo koju da odaberete, ne mo\u017eete pogrije\u0161iti.<\/p>\n<p style=\"text-align: justify;\">Popis glavnih jela donosi odli\u010dne zimske kombinacije okusa. \u201e<strong><em>Prepelicu sam spojila s <\/em><\/strong><strong>mousseom<em> od su\u0161enih marelica, a kosti i sok marelica <\/em><\/strong><em>iskoristila sam za <\/em>demi-glace<em> koji se priprema od ostataka povr\u0107a. <strong>Jelenji file pripremljen je u kori od za\u010dinskog bilja<\/strong> koje uzgajamo na terasi Oleander te crnog \u010de\u0161njaka koji se odli\u010dno sla\u017ee s <\/em>mousseom<em> od crnih truba koje sam pripremila na na\u010din<\/em> mille-feuille<em>, ba\u0161 poput slavnog francuskog deserta. <strong>\u0160karpina ovaj put dolazi s uljem od mandarine<\/strong> i bar\u0161unastim umakom od prave jesenske namirnice \u2013 dimljene i pe\u010dene bu\u010de\u201d,\u00a0<\/em>otkriva Ana.<\/p>\n<p>[\/vc_column_text][vc_empty_space]<div class=\"eltd-image-gallery  eltd-ig-slider-type eltd-large-space     \">\n\t<div class=\"eltd-ig-slider eltd-owl-slider\" data-number-of-items=\"1\" data-enable-loop=\"yes\" data-enable-autoplay=\"yes\" data-slider-speed=\"5000\" data-slider-speed-animation=\"600\" data-slider-padding=\"no\" data-enable-navigation=\"yes\" data-enable-custom-navigation=\"no\" data-enable-pagination=\"yes\" data-slider-animate-out=\"fadeOut\">\n\t\t\t\t\t<div class=\"eltd-ig-image\">\n\t\t\t\t\t\t\t\t\t<img src=\"https:\/\/esplanade.hr\/hr\/wp-content\/uploads\/2024\/12\/Esplanade-Zagreb-Hotel-Zinfandels-restoran-Lili-Basic-3-1200x800.jpg\" alt=\"\" width=\"1200\" height=\"800\" \/>\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<div class=\"eltd-ig-image\">\n\t\t\t\t\t\t\t\t\t<img src=\"https:\/\/esplanade.hr\/hr\/wp-content\/uploads\/2024\/12\/Esplanade-Zagreb-Hotel-Krem-juha-od-pecenog-kukuruza-paljeni-kukuruz-marmelada-od-cilija-amarant-2-1200x800.jpg\" alt=\"\" width=\"1200\" height=\"800\" \/>\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<div class=\"eltd-ig-image\">\n\t\t\t\t\t\t\t\t\t<img src=\"https:\/\/esplanade.hr\/hr\/wp-content\/uploads\/2024\/12\/Chef-Ana-Grgic-Tomic-Photo-Goran-Jakus-2-1200x800.jpg\" alt=\"\" width=\"1200\" height=\"800\" \/>\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<div class=\"eltd-ig-image\">\n\t\t\t\t\t\t\t\t\t<img src=\"https:\/\/esplanade.hr\/hr\/wp-content\/uploads\/2024\/12\/Esplanade-Zagreb-Hotel-Posirana-jabukova-kapica-s-mousseom-od-tartufa-1-1200x800.jpg\" alt=\"\" width=\"1200\" height=\"800\" \/>\t\t\t\t\t\t\t<\/div>\n\t\t\t<\/div>\n<\/div>[vc_empty_space][vc_column_text]<\/p>\n<p style=\"text-align: justify;\">Tu su i neizostavni specijaliteti restorana: posebna je poslastica <strong>brancin pe\u010den u soli<\/strong>, kojeg osoblje stru\u010dno filetira pred va\u0161im stolom, kao i <strong>tatarski biftek<\/strong> koji osoblje priprema upravo onako kako vi po\u017eelite, pa\u017eljivo doziraju\u0107i za\u010dine i dodatke za savr\u0161enu ravnote\u017eu okusa.<\/p>\n<p style=\"text-align: justify;\">Svaki dobar obrok treba zaokru\u017eiti ne\u010dim slatkim. Glavna Esplanadina slasti\u010darka Mirjana \u0160poljar osmislila je fantasti\u010dne spojeve okusa na koje nitko ne mo\u017ee ostati ravnodu\u0161an. <strong><em>Truffles<\/em> od tamne \u010dokolade i kestena<\/strong>, s <em>curdom<\/em> od naran\u010de ili pak\u00a0<strong><em>mousse<\/em>\u00a0od tamne \u010dokolade i gro\u017e\u0111a <\/strong>s\u00a0<em>crumbleom<\/em>\u00a0od badema i kakaa\u00a0zadovoljit \u0107e nepca svih ljubitelja \u010dokoladnih okusa, dok \u0107e obo\u017eavatelji laganih vo\u0107nih nota posebno u\u017eivati u <strong>biskvitu od \u0111umbira i meda<\/strong>, sa <strong>sorbetom od kru\u0161ke i po\u0161iranom kru\u0161kom<\/strong> u za\u010dinskom bilju i klin\u010di\u0107ima te u\u00a0<strong><em>crumbleu\u00a0<\/em>od heljde<\/strong> s\u00a0<em>mousseom<\/em>\u00a0od \u010dokolade i kremastom mandarinom.<\/p>\n<p style=\"text-align: justify;\">Vizualni spektakl i pravu simfoniju okusa donosi neodoljivi francuski klasik kojem je te\u0161ko odoljeti: <strong>flambirane pala\u010dinke Cr\u00eapes Suzette<\/strong> sa sladoledom od limuna i svje\u017eom mentom zapalit \u0107e atmosferu za stolom. Svakako ku\u0161ajte ovu poslasticu i prepustite se atraktivnom performansu koji osoblje stru\u010dno izvodi pred vama. <em>\u201ePlamenom se izvu\u010de esencija okusa. Tijekom adventa se u Esplanadi svake nedjelje poslu\u017euje <strong>Adventski <em>brunch<\/em><\/strong> od 12:30 do 16:00 uz \u010da\u0161u pjenu\u0161ca dobrodo\u0161lice i klavirsku glazbu za 129 \u20ac po osobi.
