Rije\u010d je o ljetnom <em>\u00e0 la carte<\/em> jelovniku koji potpisuje <em>chefica<\/em> kuhinje Ana Grgi\u0107 Tomi\u0107, a koji \u0107e vas na <\/strong><strong>prvu <\/strong><strong>osvojiti <\/strong><strong>fantasti\u010dnim kreativnim spojem lokalnih namirnica, sezonskih sastojaka i preciznim tehnikama pripreme.<\/strong><\/p>\n<p style=\"text-align: center;\"><strong>Svje\u017ee jadranske kozice, hlap, morski je\u017einac, kavijar, limeta, kozja skuta, tartufi, cvijet tikvice, su\u0161ene raj\u010dice, gu\u0161\u010dja jetra, ru\u017emarin, bijele \u0161paroge, bagrem, korijandar, menta, mladi gra\u0161ak, kopriva, pinjoli, patlid\u017ean, motar, komora\u010d, limunska trava i kokos samo su neki od sastojaka koje ovaj jelovnik \u010dine tako ljetnim i privla\u010dnim.<\/strong><\/p>\n<p>[\/vc_column_text][vc_empty_space][vc_column_text]<\/p>\n<p style=\"text-align: justify;\"><em>\u201e\u010cim zamiri\u0161u bazga, bagrem, <\/em><em>ru\u017emarin, motar, raj\u010dice<\/em><em>, inspiracija jednostavno po\u010dne\u201d<\/em>, ka\u017ee Ana, koja se u kreiranju <em>\u00e0 la carte<\/em> jelovnika vodila osje\u0107ajem za ritam prirode, ali i tehni\u010dkom precizno\u0161\u0107u. Rezultat je jelovnik koji uravnote\u017euje profinjene strukture, lokalne sastojke i suvremene kulinarske tehnike \u2013 bez pretjerivanja, ali s puno karaktera. \u201e<em>Kao tim razmi\u0161ljamo sezonski i tehni\u010dki izazovno. Koristimo fermentacije, infuzije, dimljenje, ali ne da bismo impresionirali, ve\u0107 kako bismo po\u0161tovali svaku namirnicu i ispri\u010dali njenu pri\u010du<\/em>.\u201d U ovom jelovniku isti\u010du se jela koja vrhunskim balansom tehnike i emocija predstavljaju hrvatsku gastronomsku raznolikost uz dodir Mediterana.<\/p>\n<p style=\"text-align: justify;\">Ljetni jelovnik iznena\u0111uje spojem sastojaka i teksturom. Svaki tanjur nosi svoj identitet, a svi zajedno stvaraju skladnu pri\u010du o sezoni i podneblju. Od senzacionalnih <strong>jadranskih kozica sa sorbetom od limete i sirutke<\/strong>, preko <strong>mariniranih vrganja s pralinom od gu\u0161\u010dje jetre i tamne \u010dokolade<\/strong>, pa sve do <strong>po\u0161iranih klije\u0161ta hlapa u maslacu od vanilije s kremom od bazge i limete uz mrkvu i sok od naran\u010de<\/strong>, svaki detalj u tanjuru osmi\u0161ljen je s pa\u017enjom i po\u0161tovanjem prema namirnici. <em>\u201eKozice poslu\u017eujemo svje\u017ee, a od ljuski radimo temeljac koji infuziramo biljem s lokalnih OPG-ova. To je \u010disti okus mora i na\u0161a filozofija <\/em>food waste-a<em>\u201d<\/em>, obja\u0161njava Ana. I to nije iznimka: cijeli jelovnik njeguje <strong>odr\u017eivost i po\u0161tovanje prema sastojku<\/strong>, ali bez kompromisa u kvaliteti i visokim standardima pripreme. U ponudi se isti\u010de i <strong><em>confit<\/em> od mlade janjetine s pala\u010dinkom od fermentirane crne le\u0107e, <em>velout\u00e9om<\/em> od medvje\u0111eg luka, kremom od pa\u0161kog sira i konfitiranim arti\u010dokama<\/strong>. <em>\u201e<\/em><em>To je jelo u kojem se spajaju tradicija i suvremene tehnike. Pravimo male pala\u010dinke i upotrebljavamo arti\u010doke u vi\u0161e tekstura. \u017delim da gosti osjete svaki detalj, da imaju pravi &#8216;<\/em>wow <em>efekt&#8217; na tanjuru\u201d<\/em>, isti\u010de <em>chefica<\/em> Ana. U ponudi su i jela poput <strong>usoljene palamide s toplom pjenom od ribljeg <em>consomm\u00e9a<\/em> i \u010dipsom od mladog krumpira<\/strong>, koja spajaju lokalno i sezonsko u izrazito tehni\u010dki zahtjevnom, ali naizgled jednostavnom formatu.<\/p>\n<p style=\"text-align: justify;\">Jelovnik tako\u0111er iznena\u0111uje teksturama i ritmom. Neki tanjuri o\u010daravaju laganim formama, drugi slojevito\u0161\u0107u, a svaki ima svoju pri\u010du. Ana je primila niz <strong>priznanja za osobnost, izvrsnost i stil kuhanja<\/strong>. Presti\u017ene publikacije nominirale su je za <strong>\u017eenu godine i osobu godine<\/strong>. Njezin je ri\u017eoto 2013., 2016. i 2022. u poznatom vodi\u010du\u00a0<strong><em>Guida Gallo<\/em><\/strong><em>\u00a0<\/em>uvr\u0161ten na popis najboljih ri\u017eota na svijetu. Anin stil pripreme jela i njezina osobnost doveli su je do sudjelovanja u poznatim kulinarskim televizijskim emisijama\u00a0<strong><em>Celebrity MasterChef<\/em>\u00a0<\/strong>i <strong><em>Tri, dva, jedan \u2013 kuhaj!<\/em> <\/strong>u ulozi \u010dlanice \u017eirija. Uz to, Ana ponosno nosi titulu <strong>ambasadorice projekta\u00a0<em>Fish Forward<\/em><\/strong><em>\u00a0<\/em>u Hrvatskoj u inicijativi WWF-a (Svjetska organizacija za za\u0161titu prirode) da bi svojim primjerom utjecala na svijest potro\u0161a\u010da o globalnim ekolo\u0161kim i socijalnim posljedicama potro\u0161nje proizvoda iz ribarstva. Ana je me\u0111u prvima u Hrvatskoj u suradnji s WWF-om u poslovanje hotela uvela <strong>program Food Waste<\/strong> i svojim je odr\u017eivim na\u010delima pripreme hrane restoranu Zinfandel&#8217;s donijela presti\u017enu <strong>zelenu Michelinovu zvjezdicu. <\/strong>Godine<strong> 2023. na dodjeli nagrada <\/strong><strong><em>European Hotel Awards<\/em><\/strong> u Barceloni <strong>Svjetska gastronomska organizacija<\/strong> Ani je uru\u010dila posebno priznanje <strong><em>\u00c9toile Blanche<\/em><\/strong>, a 2022. Ana je okrunjena titulom <strong><em>Chefa <\/em>godine po izboru vodi\u010da\u00a0<em>Gault&amp;Millau Hrvatska<\/em><\/strong><em>, <\/em>dok je 2016. primila nagradu za<em> <strong>Chefa <\/strong><\/em><strong>sutra\u0161njice<\/strong>. Njezinu gastronomsku virtuoznost i kreativnost prepoznalo je gurmansko udru\u017eenje <strong>Cha\u00eene des R\u00f4tisseurs<\/strong> koje je Ani dodijelilo presti\u017enu titulu\u00a0<strong><em>Chef R\u00f4tisseur<\/em><\/strong>.
