Svaki detalj \u2013 od sastojka do serviranja \u2013 osmi\u0161ljen je da vas iznenadi, odu\u0161evi i podsjeti koliko je u\u017eivanje u hrani jednostavno kad se sve radi s pa\u017enjom. Chefica <strong>Ana Grgi\u0107 Tomi\u0107<\/strong>, lice i duh <strong>Zinfandel\u2019sa,<\/strong> ponovno pomi\u010de granice fine dininga \u2013 na svoj na\u010din: pristupa\u010dno, odr\u017eivo i s potpisom. \u201e<em>Volim kad jelo ima karakter \u2013 da se okusi stapaju prirodno, ali da ostave sna\u017ean dojam. Jesen i zima su pune emocija i sastojaka koji su fantasti\u010dni \u2013 od smr\u010daka i lisi\u010darki do kestena, sve ima svoju pri\u010du<\/em>,\u201c ka\u017ee Ana.<\/p>\n<p style=\"text-align: justify;\">Novi <a href=\"https:\/\/esplanade.hr\/press\/download\/menus\/Esplanade-Zagreb-Hotel-Zinfandels-Menu.pdf\"><strong>Zinfandel\u2019sov \u00e0 la carte jelovnik<\/strong><\/a> donosi savr\u0161en sklad sezonskih sastojaka i preciznih tehnika pripreme. Po\u0161irana kamenica sa salatom od shiso lista, pjenom od lista kamenice i tuileom od hrena ve\u0107 na prvi pogled odu\u0161evljava, dok lisi\u010darke u tamnom consomm\u00e9u od vanilije otkrivaju neodoljivu dubinu i balans okusa. Dimljene dagnje i hrskava pr\u017eena heljda stvaraju sjajan kontrast koji zaokru\u017euje pikantni dunjin pekmez. Oscietra kavijar u spoju s tartom od karameliziranih \u010di\u010doka i kremom od pr\u017eenog lje\u0161njaka prava je poslastica koju svakako vrijedi do\u017eivjeti. Ledeni prah od gu\u0161\u010dje jetre s celerom kuhanim u portu, velout\u00e9 od pe\u010dene bu\u010de s cannolom od bu\u010de i bu\u010dinim sjemenkama te bisque juha s pe\u010denom triljom \u2013 svaki tanjur pri\u010da pri\u010du o sezoni i snazi okusa. Confit od janjetine s pala\u010dinkom od fermentirane crne le\u0107e i anisa, uz bar\u0161unastu kremu od pa\u0161kog sira i maslinovog ulja te nje\u017eno confitirane arti\u010doke, zasigurno \u0107e biti hit sezone. File romba u listu kelja s kremom od pe\u010denog celera i paljenim shiitakama, kao i file kova\u010da s brokulinima, algama i ukiseljenim motarom, donose pravu sinfoniju okusa. Svaki zalogaj ima dinamiku \u2013 ni\u0161ta nije slu\u010dajno, ali sve u spoju djeluje prirodno. \u201e<em>Volim spojiti ono \u0161to na prvi pogled ne ide zajedno i gledati kako se okusi stapaju u tanjuru i daju uzbudljivo jelo<\/em>,\u201c <strong>dodaje chefica Ana<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Zinfandel\u2019s ve\u0107 godinama posebnu pa\u017enju posve\u0107uje <strong>odr\u017eivom pristupu<\/strong> \u2013 od biranih lokalnih proizvo\u0111a\u010da do minimalnog otpada i sezonskih namirnica koje \u010dine razliku. Tu su i vegetarijanska i bezglutenska jela te ona prilago\u0111ena prehrambenim navikama \u2013 pripremljena s jednakom pa\u017enjom. \u201e<em>Kod nas nitko ne smije imati osje\u0107aj da mu je ne\u0161to uskra\u0107eno<\/em>,\u201c dodaje Ana. Atmosfera u Zinfandel\u2019su ostaje neponovljiva. Kad se svjetla lagano prigu\u0161e i ambijent preplavi onaj crveni sjaj, po\u010dinje predstava. Osoblje pred vama priprema jela poput <strong>ru\u010dno kosanog tatarskog bifteka<\/strong> \u2013 koji je pri\u010de za sebe \u2013 ili <strong>filetira brancina pe\u010denog u soli<\/strong> kojeg svakako valja ku\u0161ati. U ponudu se ponovno vra\u0107a <strong>vatreni \u0161ou<\/strong> \u2013 <strong>flambiranje slasnih Cr\u00eapes Suzette pala\u010dinki<\/strong> pred va\u0161im stolom, koje dolaze sa sladoledom od limuna i svje\u017eom mentom. \u201e<em>To su oni trenuci koji pretvaraju ve\u010der u nezaboravan gurmanski do\u017eivljaj koji se pamti<\/em>,\u201c ka\u017ee Ana kroz smijeh.
