Mjesta na kojima se vrijeme uspori, \u010da\u0161e lagano oro\u0161avaju, razgovori produ\u017ee, a svaki zalogaj postane dio uspomene. Oleander terasa hotela Esplanade upravo je jedno od njih.<\/p>\n<p style=\"text-align: justify;\">U hladu oleandera, uz pogled na park i fontanu, dok grad pulsira svojim ljetnim ritmom, Zinfandel&#8217;s predstavlja novi \u00e0 la carte jelovnik koji \u0107e ovog ljeta biti jedan od najpo\u017eeljnijih razloga za ostanak u Zagrebu.<\/p>\n<p style=\"text-align: justify;\">Iza njega stoji <strong>chefica Ana Grgi\u0107 Tomi\u0107<\/strong>, \u010dije su kreacije ve\u0107 godinama sinonim za izuzetnu gastronomiju koja ne podilazi trendovima, nego ih suptilno postavlja. Njezin novi jelovnik poziv je na gastronomsko putovanje kroz hrvatske vrtove, obalu, \u0161ume i otoke \u2013 ispri\u010dano kroz suvremene tehnike, vrhunske lokalne namirnice i neo\u010dekivane spojeve koji iznena\u0111uju, ali uvijek ostaju vjerni okusu. \u201e<em>Ove sezone \u017eeljela sam kreirati jelovnik koji iznena\u0111uje neo\u010dekivanim spojevima. Od dimljenih \u0161koljki sv. Jakova i kardamoma, preko smokve i ru\u017emarina u ri\u017eotu, pa sve do hlapa pe\u010denog na otvorenoj vatri \u2013 svaki tanjur zami\u0161ljen je kao susret poznatog i novog, tradicije i suvremene tehnike<\/em>\u201c, isti\u0107e Ana Grgi\u0107 Tomi\u0107.<\/p>\n<p style=\"text-align: justify;\">Ve\u0107 prvi zalogaji daju naslutiti da je rije\u010d o jelovniku koji \u0107e se dugo pamtiti. <strong>Tartar od nje\u017eno dimljenih \u0161koljki sv. Jakova<\/strong> dolazi u dru\u0161tvu bar\u0161unastog b\u00e9arnaisea od kardamoma, karamelizirane mrkve i aromati\u010dnog ulja od lista mrkve. <strong>Usoljeni gof<\/strong> osvaja svje\u017einom vode od raj\u010dice i bosiljka, dok ledeni prah od crnog \u010de\u0161njaka donosi neo\u010dekivanu dubinu i profinjen zavr\u0161etak. Me\u0111u jelima koja \u0107e zasigurno privla\u010diti poglede nalazi se i <strong>dimljena jegulja<\/strong> glazirana slatko-citrusnim umakom, poslu\u017eena uz waffle, mousse od koprive i lemon caviar, kao i rasko\u0161ni <strong>Oscietra kavijar<\/strong> <strong>s mousseom od cvjeta\u010de i bijele \u010dokolade<\/strong> te mlijekom infuziranim dimljenom cvjeta\u010dom. Upravo se u tim detaljima prepoznaje Anin potpis \u2013 sofisticiranost bez pretencioznosti i odva\u017enost koja nikada ne nadja\u010dava samu namirnicu.<\/p>\n<p style=\"text-align: justify;\">Ljeto na tanjuru nastavlja se kroz <strong>jadranske kozice s kremom od bagrema<\/strong> i nje\u017enim bijelim \u0161parogama, <strong>\u0161kampe marinirane medom <\/strong>uz velout\u00e9 od mladog gra\u0161ka i mente te <strong>doma\u0107e raviole punjene kozjom skutom i tartufima<\/strong>. Posebnu pa\u017enju privla\u010di <strong>kremasti ri\u017eoto s pe\u010denim smokvama<\/strong>, ru\u017emarinom i kremom od pa\u0161kog sira \u2013 zavodljivo jelo koje na najljep\u0161i na\u010din spaja kontinentalnu toplinu i mediteransku bezbri\u017enost.<\/p>\n<p style=\"text-align: justify;\">\u201e<em>Volim kada gosti prepoznaju namirnicu, ali je do\u017eive na potpuno novi na\u010din. Zato se poigravam teksturama, temperaturama i aromama, no uvijek s ciljem da okus ostane u prvom planu. Najva\u017enije mi je da svaki tanjur ima svoju pri\u010du i emociju<\/em>\u201c, isti\u010de Ana.<\/p>\n<p style=\"text-align: justify;\">Ljubitelji intenzivnijih okusa ne\u0107e propustiti bogatu <strong>bisque juhu<\/strong> s lagano pe\u010denom triljom i gelom od crnog \u010de\u0161njaka, dok <strong>krem juha od pe\u010denog celera<\/strong> s kroketom od gu\u0161\u010dje jetre i tonkom donosi privla\u010dnu interpretaciju dobro poznatih sastojaka.<\/p>\n<p style=\"text-align: justify;\">Me\u0111u glavnim jelima posebno se isti\u010de <strong>grdobina po\u0161irana u maslinovom ulju <\/strong>sa sokom od divljeg za\u010dinskog bilja i pjenom od medvje\u0111eg luka, dok je <strong>hlap pe\u010den na otvorenoj vatri<\/strong>, glaziran umakom od slatke paprike i \u010dilija te poslu\u017een uz velout\u00e9 od ljuske hlapa i kremastu palentu sa \u0161afranom, pravo malo slavlje ljeta \u2013 rasko\u0161no, odva\u017eno i nezaboravno.<\/p>\n<p style=\"text-align: justify;\">Slatki zavr\u0161etak potpisuje pastry tim pod vodstvom <strong>pastry chefice Mirjane \u0160poljar<\/strong>. Ko\u0161arica od <strong>meringe s kokosom, mangom i marakujom<\/strong> priziva bezbri\u017ene tropske dane, <strong>cr\u00e9meux od \u010dokolade s maslinovim uljem<\/strong> Drobnica i cvijetom soli reinterpretira omiljene klasike, dok cr\u00e9meux od <strong>jagode s pistacijom, bosiljkom i bergamotom <\/strong>donosi mo\u017eda i najukusniju definiciju sezone.<\/p>\n<p style=\"text-align: justify;\">Kao i dosad, Zinfandel&#8217;s ostaje vjeran odr\u017eivosti, po\u0161tivanju podrijetla namirnica i individualnim prehrambenim navikama gostiju, uz pa\u017eljivo ozna\u010dene alergene i preporuke stru\u010dnog osoblja.<\/p>\n<p style=\"text-align: justify;\">\u201e<em>Inspiraciju pronalazimo u hrvatskim proizvo\u0111a\u010dima, vrtovima, obali i kontinentalnim krajolicima. Svaki tanjur odra\u017eava na\u0161u \u017eelju da gostima pru\u017eimo iskustvo koje \u0107e pamtiti dugo nakon posljednjeg zalogaja<\/em>\u201c, zaklju\u010duje Ana Grgi\u0107 Tomi\u0107.<\/p>\n<p style=\"text-align: justify;\">A upravo je to ono \u0161to ljeto u Zinfandel&#8217;su \u010dini posebnim. Nije rije\u010d samo o ve\u010deri.
